work work work

12-14 hour days, 6 days a week. Constant planning, teaching, coaching, decisions, and about 750,000 details to work out. I guess I knew this was coming. I pushed opening by a few days to allow for some extra training. Open to the public day is now May 1, and today I will decide on final dates and times for the practice days and VIP party.

It's a lot of work, David, opening a new restaurant, and we are very proud of you and your accomplishments. Good luck on the opening, it will be a zoo. We hope it is, with tons of patrons.
